Eileen Shanks had this fun fact about the Tortilla Roll-Ups recipe to share:
This is another favorite of mine from my Mother-In-Law.
1 package large tortillas
1 – 8 oz. cream cheese (softened)
3/4 cup sour cream
1 tsp taco seasoning
1/2 tsp cumin
1/8 tsp cayenne pepper
dash of salt
1/8 tsp. garlic powder
1 can green chilies (diced)
1 can black olives
Ingredients continued: 3 to 4 green onions (finely chopped) 2 to 3 cups chedder cheese (shredded) salsa In a large bowl blend cream cheese, sour cream and seasonings until smooth. Add chilies, black olives and onions, blend. Add cheese and mix well. Lay tortillas flat, spread cheese mixture over entire tortilla, about 1/4″ thick. Roll firmly. Repeat until finished. Lay roll-ups on flat plate or board. Cover with plastic wrap and refrigerate several hours or overnight. To serve, slice into rounds, about 1/2″ wide. Arrange on platter with bowl of salsa and ENJOY!
