Chunky Potato Soup

6 large golden potatoes (chopped)
1 large onion (chopped)
6 tbsp butter
6 tbsp all-purpose flour
crushed red pepper flakes
ground black pepper
6 cups milk
1 tsp sugar
2 cups shredded Cheddar cheese

Cooking Instructions

Boil potatoes until tender. Drain, reserving 2 cups of cooking liquid; set aside. Melt butter in a large pot over medium heat. Add onion to pot; cook, stirring frequently, until onion is translucent and tender, but not brown. Add flour and reserved cooking liquid to pot; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes. Gradually add potatoes, milk, and sugar to onion mixture in pot; stir well. Add cheese. Simmer over low heat 30 minutes, stirring frequently.
